As a stay-at-home dad juggling ADHD, I know the struggle of keeping school lunches exciting and healthy. And it feels like they're NEVER ENDING! And then you have to make dinner! Every day! BAH! Lol.
Here are some easy and fun lunch ideas that won’t leave your kids trading their sandwiches.
1. Wraps and Roll-Ups: Whole-grain tortillas stuffed with turkey, chicken, or whatever protein your kid likes. Add some veggies, roll them up, and slice them into fun pinwheels. Easy to eat and no mess – win-win!
2. Bento Boxes: These are like mini buffets. Pack fruits, veggies, proteins, and a little treat. Think apple slices, carrot sticks, cheese cubes, and a few crackers. Variety keeps it interesting.
3. DIY Lunchables: Make your own healthier version of those store-bought lunch kits. Whole-grain crackers, deli meat slices, cheese, and some fruit. Let the kids build their own mini sandwiches.
4. Pasta Salad: Cook some whole-wheat pasta, throw in diced veggies, and mix with a light vinaigrette. Add grilled chicken or chickpeas for protein. Tasty and filling.
5. Smoothie Bowls: Blend their favourite fruits with some yogurt, pour it into a container, and top with granola and berries. It’s like a breakfast smoothie but in a bowl. Super fun and healthy.
